Beets, what are they good for? Well for one they make an already delicious brownie recipe turn a beautiful color of red, and just in time for Valentine’s Day. Enjoy this special treat for a very special day, my husband certainly enjoyed taste testing them and was surprised they actually had beets in them.

Over the Summer my husband and I started having a box of local produce delivered to our door weekly. I was always looking for ways to get fresh, local produce without having to run to various farmer markets scattered across the greater Charlotte area. I was also looking for a way to introduce NEW produce to my husband, sometimes without his knowledge.
Early in the Fall, we received a box with a funky looking pumpkin, or what I thought was a pumpkin. Turns out it was a Butterkin and so began my hunt for what to make with this cute little vegetable. I stumbled across a vegan recipe, but since we aren’t vegan and do occasionally like cheese I have adapted the recipe drastically to fit our tastes.
This is the start of a very fun adventure for me this year. I have always loved baking quick bread and sweet treats but wanted to learn how to make dough and bread, for the very simple reason, I hate buying junk and love to know what I am eating.
My husband and I typically have pizza and wine on Friday nights, but it was always take-out or one of those quick pre-made pizza doughs you can grab from any grocery store. I had become pretty good at making the pre-made dough taste homemade by the use of toppings and seasonings, but I was just over not knowing what was actually in the dough, thus began my hunt and learning experience on making pizza dough.
I have to say it turned out amazing and since the recipe makes two, I threw one in the freezer and fingers crossed it thaws out and tastes delicious next week.
Side note – my mother in law swears she does it all the time, and she knows her way around a kitchen, so I believe my thawed dough will be perfect!
Well winter hit the South with a vengeance this year and I was one who did not want to have to venture out on those cold days, but always felt like I just wanted some delicious comfort food. One of my goals for 2018 is to make more homemade meals, more than normal that is. I typically make all of our meals, zero shortcuts, zero pre-packaged items – call it a joy of being able to have time and be at home all day, or the fact that I was raised by a mother and a grandfather who made soups from scratch. Like boil animal carcasses and make their own broth kind of scratch. I don’t have the time, or a big enough pot to think of it, but I do like trying to make all our soups from scratch because I hate not knowing what is in my food. So, here is a very simple made from scratch tomato soup. Next up I will have to make homemade bread for a delicious homemade grilled cheese and tomato soup dinner.
